Chicken and Cheesy Sourdough

Looking for a quick lunch

You will need:

  • 50g feta or cream cheese (leave out if vegan option- or choose plant based Philadelphia)
  • salt and pepper
  • Pack of pre-cooked beetroot.
  • lemon juice
  • Garlic clove/ lazy garlic (jarred garlic)
  • Lazy chilli (jarred chilli)
  • Extra virgin olive oil (EVOO)
  • Ryvita/ rye sourdough/ toast of choice.
  • Parsley or fresh mint
  • Cooked chicken (you can also cooked tofu or vegan chicken)
  • Handful of seeds

Blitz the beetroot with the cheese of choice, garlic, salt, pepper & lemon juice, EVOO in a blender.

Toast the sourdough, spread the mixture on the toast and top with protein of choice and top with chilli flakes and seeds.
