Summer Salmon Salad




2 small salmon fillets

1 tsp garlic powder

 A finely chopped chilli

½ teaspoon smoked paprika

Freshly squeezed lemon juice

Spray oil



2 small handfuls of rocket

1/2 chopped red pepper, ½ chopped yellow pepper

3 chopped spring onions



  1. Mix together the lemon juice, paprika, chilli and garlic powder and marinade the salmon in it for 1 hour in the fridge
  2. Pop the salmon onto a pre – heated griddle pan with spray oil – cook for around 5 mins on each side until the salmon is cooked through Meanwhile chop the salad ingredients and pop on a plate
  3. Once the salmon is cooked serve on top of the salad


Serve with rice or baby new potatoes if desiredSalads are traditionally thought of as a fairy boring dish but they don’t have to be – try these ideas as a little change from your traditional salad
