Walnut & Raspberry Brownies

Perfect homemade snack

Makes 12 brownies

  • 1 tbsp ground flaxseed/linseed
  • 250ml milk
  • 70ml olive oil
  • 170g melted dark chocolate
  • 80g oat flour (blended oats)
  • 140g plain flour
  • 50g coco powder
  • 100g brown sugar
  • 120g fresh raspberries
  • 90g dark chocolate chunks
  • 75g crushed walnuts

*this needs to be room temperature,  if it is too cold once its mixed it will clump or split.

 

Method:

  1. Preheat the oven to 180c and line a regular baking tray with baking paper
  2. Melt the chocolate (use the bain marie method to prevent it going grainy)
  3. In a small bowl combine flaxseed (ground) with 2tbsps warm water and put aside (this acts as the egg in this recipe)
  4. In a larger bowl: combine the milk, oil and melted dark chocolate. In a different large bowl combine oat flour, plain flour, coco powder and brown sugar.
  5. Add the flax egg to the wet ingredients and mix before adding to the bowl of dry ingredients. Combine until mixed.
  6. Add ½ raspberries, ½ chocolate chunks and ½ crushed walnuts. Stir carefully through the brownie mixture and pour into the tin.
  7. Add the remaining raspberries, chocolate chunks and nuts on top.
  8. Bake for 30 minutes. Allow to cool for 15 minutes before removing from the baking tray and slicing.
