Sautéed Veggies with Cream Cheese Toast

this recipe is perfect for any time of day.

  • 1tbsp Worcestershire sauce
  • 1tsbp soy sauce
  • 1 tbsp apple cider vinegar
  • ½ tsp sesame oil
  • 1 tspchilli honey
  • 1 garlic clove (crushed)
  • ½ shallot (chopped thinly)
  • Generous handful of shiitake mushrooms/ oyster mushrooms chopped up.
  • 6 Plum tomatoes
  • Sprinkle of sesame seeds
  • Handful of spinach
  • 2 Ryvitas/ protein bagel/ bread thin/ rye bread
  • 2 tbsp light cream cheese or mascarpone
  • Salad onion- chopped finely

 

  1. Mix together the first 5 ingredients, and add to a pan until it heats up slightly.
  2. Add the garlic, shallot, mushrooms, and sautee in the sauce. After the veg has started to cook down and wilt, add the tomatoes and spinach.
  3. Top your bread of choice with cream cheese, veggie mixture, spring onion and sesame seeds.
