Porridge Pancakes

For 2 servings-

  • 1 cup of oats
  • 1tsp baking powder
  • ½ bicarbonate of soda
  • 2tsp protein powder
  • 1 banana
  • 1 egg (chia egg can work too for a vegan version of this recipe- mix 1tbsp chia seeds with 3 tbsp water and wait 5 minutes until if forms a gel like substance)
  • 175ml milk, oat milk or almond milk

To make the pancakes:

Blend oats with the dry ingredients to make flour.

Mash egg with the banana and add into the flour mixture.

Add milk of choice slowly until you reach the desired texture of the pancake batter- it should be a smooth consistency not too thick and not too runny.

Leave to sit for 5-10 mins and add some more milk if needs be an the batter is ready to cook!
