Hummus, Spinach and Olive Pasta

You will need:

 

100g of brown pasta or red lentil pasta (higher in protein). N.B if coealic you can use gluten free)

100g of broccoli

50g of spinach leaves

75g of olives

20g of pumpkin seeds

1 tbsp of good quality extra virgin olive oil

1/2 lemon, juiced.

salt and pepper

chilli flakes

4 tbsp of any hummus.

 

How to make:

 

  • Boil the water add a pinch of salt, add the pasta and cook as per the pack instructions. Add the broccoli to the water for the last 3 minutes of the cooking time
  • Drain the pasta and broccoli and add back to the pot you boiled it in, add the spinach and allow to wilt then add the rest of the ingredients, stir well and enjoy.
