Healthy rocky road bites
A healthier option to this well known snack
- 125g dark chocolate (anything over 60 percent is preferable).
- handful marshmallows (sugar free ones if you want)
- Puffed rice or rice cakes crumbled
- Raisins or dried blueberries or glace cherries
- Pumpkin seeds
- Sunflower seeds
- Melt the chocolate- slowly over a bain marie (this is really important as it stops it melting too soon and going grainy in texture), add in a pinch of salt (this brings out the chocolate-y flavor!)
- Add in the seeds, raisins, marshmallows and rice. Press down into a tray and then place in the fridge for 1hr to harden.
- Keep your portion small and enjoy
